
A quarter of beef is one of the most popular and economical ways to stock your freezer with high-quality, locally raised beef. When you pre-order a quarter, you're reserving approximately 90-110 lbs of packaged, ready-to-cook beef from a whole animal.

Cuts included: Steaks (ribeye, NY strip, sirloin, tenderloin, etc.), roasts (chuck, rump, round, tip), ground beef, stew meat, short ribs, brisket, soup bones, and more—everything from one quarter of the animal.
Customization: Before processing, you’ll work with the butcher to choose your preferred thickness for steaks, size of roasts, and ground beef products. Paulie's Chop Shop in Luxemburg, WI is our usual butcher. They have lots of options for cuts and flavors, and are great at helping you through the process the first time. You can also request items like tenderized round steaks or extra trim for burger patties.
Packaging: Vacuum-sealed and frozen for maximum freshness and long-term storage (up to 12–18 months in a freezer).

Note: Exact weight and final packaged amount will vary slightly based on the individual animal, butchering choices, and trim level. A deposit is typically required to secure your quarter, with the balance due when the beef is ready for pickup or delivery (usually 2–4 weeks after harvest).
