Quick Start Guide to Beef Quarters

Never ordered a quarter of beef? It might seem more confusing than buying at the grocery store, but really, it’s going back to basics. Food directly from the family that raised it.
You want food you don’t have to second-guess. Food you can trust. But it still has to fit into your real life and routine.
How the process works:
1. Place a deposit and lock in your quarter [HERE].
2. I’ll text you when your steer is going in.
3. You’ll get a text from Paulie’s Chop Shop with a link to create a profile and choose your cuts.
Here’s a simple guide to help you fill out the cut sheet, plus notes on what each option actually means so you can decide what works best for your household.
Steaks:
Ribeye, Porterhouse, T-Bone, Sirloin
Choose your thickness: ¾ inch - serves 1-1.5 people, 1 inch- serves 1.5-2 people
Choose Quantity per package- usually 1 or 2
Roasts:
Chuck, Sirloin Tip, Rump
Options:
• No - Grind
• 2–3# (good for a household of 2–3)
• 3–4# (good for a household of 4+)
*Chuck Roast and Sirloin Tip Roasts are my favorite and the most tender and flavorful. Rump Roast is a great option for sliced beef for sandwiches and makes a great pot roast. If you don’t make a lot of roasts in your house, Rump roast could be ground for more burgers or sausage.
Brisket
• No - Grind
• Cut in half
• Whole
• Smoked $25 (ready to eat — smoked, sliced, packaged, and frozen. Just thaw, season, and enjoy!)
We cook a lot of ground beef and burger patties, so these are some cuts we choose to grind.
Stew meat — I don’t have a favorite stew recipe!

Regular/Tenderized Round — Can be tough if not prepared carefully. I usually opt out and grind it.

Short rib - I dont have a favorite recipe, so this tends to be the last thing I choose to cook. Sometimes I'll choose to grind it.

Now that you have ordered your steaks and roasts, you get to choose which options you would like for ground beef. Anything you selected “no” on will be added to your ground beef.
My favorite way to order is 10-20 pounds of a specialty item - like garlic summer sausage- then split the rest between ground beef 1 pound tubes, and 1/3 pound burger patties.
