How We Raise Our Beef and Pork (and Why It Tastes So Good)

We started farming because we wanted this lifestyle for our family, but also because

we’re very choosy about the food we eat. There’s something deeply comforting in

knowing exactly where our meat comes from, how the animals lived, who cared for

them, and the journey they took before reaching our dinner table.


Most of our animals are born and raised right here on the farm. We birth our hogs on-

site and raise them until they’re ready to head to the trailer for Paulie’s Chop Shop in

Luxemburg, Wisconsin. Because we’re a small family operation, every animal gets

individual care and attention. (AJ handles most of the daily chores, though the kids pitch

in as enthusiastic helpers when the mood strikes!)


I love getting to know each pig’s personality, offering them treats like spare apples from

the neighbor’s tree, and watching them grow. The kids are learning that we raise these

animals for the purpose God intended—to nourish our bodies and provide real value to

our family.



For beef, we usually buy calves at about three months old and finish them here until

they’re 15–19 months. The kids enjoy picking names or nicknames for them, though we

also use ear tags for identification. The cattle get a balanced, free choice diet of corn,

vitamin and mineral pellet, grass and hay. They get to go outside every day, and love to

snuggle into a fresh straw bedpack when it’s windy out.



The real secret to the outstanding taste? It comes down to good diets, never skimping

on quality ingredients, and keeping the animals healthy and low-stress. Our beef are

50% beef × 50% dairy crosses, which gives us the perfect balance: nice steak sizes

with excellent marbling for rich flavor and tenderness. We take these steps seriously

because we want a safe, delicious product for our own family as well as anyone who

buys from us.
